Cassandra’s Gourmet Classics began in my licensed kitchen in Woodbridge, Virginia in 2006. My goal was to create the best tasting Rum Cake that would be enjoyed by all. I began by selecting a combination of ingredients to obtain the desired texture and chose a Rum that would enhance the flavor without leaving an overpowering alcohol taste. Once I felt I had achieved the taste and texture it was time to develop packaging for retail. Since the rum was originally developed in the islands, we chose the name Island Treasures Gourmet to market our product. My partner/husband began selling to gourmet and specialty stores and within a few years we outgrew our home kitchen. In 2008, we moved to our first commercial facility located in Manassas, Virginia. We began receiving inquiries from US and Caribbean companies asking us to private label our product using our proprietary formula and process. Once again, we outgrew our facility and, in 2011, began buildout on a facility twice the size of the previous one. We are now looking for a larger facility as we will need to move again, in the near future. In 2017, after a few packaging changes, we began selling food service items through distributors.
